Authentic Tandoori Aloo (Potatoes with spices)

  • Red pepper flakes,1 teaspoon 
  • Turmeric, ¼  teaspoon 
  • Amchur (dry mango) powder, 2 teaspoons
  •  Cumin powder, ½ teaspoon
  • Lemon juice ,2 teaspoons 
  • Salt as desired
  • A few handfuls of freshly chopped cilantro


  • Prior to skewering using grilling skewers, you can parboil or partially cook the potatoes to make them a little softer, but avoid overcooking them.
  • You can choose to leave the peel on or off once they have been cooked. Put them apart.
  • Here, we make a basting sauce that will be used over the potatoes while they cook and then used to sprinkle the remaining sauce over the finished dish.
  • Prepare your spices first.
  • Chili pepper should be diced.
  • Utilizing a mortar and pestle, crush the coriander seed.
  • Heat two tablespoons of vegetable oil in a skillet or kadhai or pan. Toss the cumin seeds into the heated oil.
  • Let them toast. Add the crushed coriander seeds and serrano chili as soon as they begin to smell fragrant, which should take less than a minute.
  • Add salt, dried mango powder (amchur), roasted cumin powder, turmeric, and chili flakes at this point. These should be heated briefly while being stirred. Your basting fluid is this. Leave it alone.
  • After brushing the potatoes with oil, thread them onto oiled skewers.
  • Start the tandoor oven or clay tandoori oven. Potatoes skewed on a tandoor oven or clay tandoori oven using grilling skewers, will take roughly 5 minutes at 400 degrees to get cooked.
  • Apply the spice and marinade to the potatoes.

  • Recoat them with the marinade before adding them back to the kadhai.
  • Put some lemon juice on them.
  • Add some cilantro that has been cut to them.

Serve it with mint chutney.
