Tandoor Chicken with Lime pickled cucumber

- Full-fat Natural Yoghurt, 700ml
- Chicken thighs, 4 large or 8 small
- Grated garlic cloves, 4
- Peeled and grated Ginger , 1 pc
- Tomato puree,1 tablespoon
- Cumin Seeds, 2 teaspoons
- Ground coriander, 2 teaspoons
- Ground turmeric, 2 teaspoons
- Spicy Chilli powder, 1 teaspoon
- 2 teaspoons of sweet smoked paprika
For the pickled cucumber
- Squeezed limes, 3pc
- Sugar ,1 teaspoon
- Finely chopped red chilli ,1 pc
- 1 large cucumber, split in half, seeds removed,
- ½ small red onion, finally cur
The yogurt’s shake
- Yogurt, 300 ml
- Ground cumin 1 teaspoon
- 1 tiny coriander bunch
STEP 1 Use a sharp knife to score the chicken. In a sizable bowl, mix the yogurt, garlic, ginger, tomato purée, spices, lemon juice, and 1 1/2 tsp. salt. Add the chicken,cover, and refrigerate for eight hours.
STEP 2 To make the pickle, combine the cucumber, red onion, and 1 tsp. salt with the lime juice, sugar, and chillies. Wait for one hour or Until ready to use.
STEP 3 Pour the yogurt, cumin, and herbs in a food processor with a little salt. Shake until required.
Step 4 This step Involves shaking off any excess marinade and placing the chicken on grilling skewers while keeping the remaining marinade. Once the tandoor oven or tandoori clay ovens reaches the desired temperature of 180°C/160°F/gas , put the grilling skewers vertically in the tandoor oven or clay tandoori oven,
STEP 5, Adjust the setting and heat the tandoori oven or tandoori clay oven to high. Grill the chicken skin-side up for 10 to 15 minutes, or until it starts to turn a light shade of black. Reset the tandoor oven or lay tandoori oven to its default setting of 180°C/160°F/gas 4. Place the chicken in a roasting pan, brush with the marinade that was saved, and grill for 20 minutes in the tandoor oven or clay tandoori oven. Serve with basmati rice, cucumber, yogurt, and cucumber pickles.
